Steps for Prep
Here is the play by play:
- Set up steaming basket over boiling water
- Prepare steaming plate
- Make 3 incisions along the body of the fish
- Place whole scallions underneath belly
- Place cross-wise ginger slices on top of fish
- Steam for 10-12 minutes
- In the meantime
- Prepare the seasoning sauce
- Heat a small amount of neutral oil until it begins to smoke
- Slice scallions lengthwise
- Once steamed -
- Pour off dark liquid from fish
- Dispose of ginger and scallions
- Place on New Plate
- Place scallions and cilantro on top of fish
- Pour boiling hot oil over fish then pour seasoning sauce over the top
- Serve immediately! 🏁
