Steps for Prep

Here is the play by play:
  1. Set up steaming basket over boiling water
  2. Prepare steaming plate
    • Make 3 incisions along the body of the fish
    • Place whole scallions underneath belly
    • Place cross-wise ginger slices on top of fish
  3. Steam for 10-12 minutes
  4. In the meantime
    • Prepare the seasoning sauce
    • Heat a small amount of neutral oil until it begins to smoke
    • Slice scallions lengthwise
  5. Once steamed -
    • Pour off dark liquid from fish
    • Dispose of ginger and scallions
    • Place on New Plate
  6. Place scallions and cilantro on top of fish
  7. Pour boiling hot oil over fish then pour seasoning sauce over the top
  8. Serve immediately! 🏁
